ROAD TRIP - ART IN THE CAR, JOURNAL ART

What do you do on a road trip.  You load the CD player with a great book, grab some magazines and some edible treats.  Don't forget to grab some paper and a BTK (Basic Tool Kit) and hit the road.  I never take a road trip without my BTK gives me something to do in car instead of wondering "are we there yet".  If you're lucky while you're on the road you might find some neat things along the way to incorporate in your road trip journal.

It's amazing what you can do from the front seat of a car.  Below are some of my ART IN THE CAR JOURNAL.

HOT POPOVERS

These were so easy to make. The came out of the oven with a nice crusty shell and the inside was warm  buttery.

Ingredients

1 cup all-purpose flour

1/4 teaspoon salt

3 eggs

1 cup milk

1 tablespoon unsalted butter, melted

2 tablespoons unsalted butter, chilled*

Directions

1. Preheat oven to 425 degrees F (220 degrees C).

2. Spray a popover pan with nonstick cooking spray. Place pan on center rack of oven and preheat for 2 minutes.

3. Blend flour, salt, eggs, milk, and melted butter until it looks like heavy cream, about 1 to 2 minutes.

4. Cut chilled butter into 6 even pieces. Place 1 piece of butter in each cup and place pan back in oven until butter is bubbly (about 1 minute). *This step is optional if you're trying to cut calories.

5. Fill each cup half full with batter and bake 20 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake for another 15 to 20 minutes

Ordinary miracles God bless you! Ordinary miracles
Today...I wish you a day of ordinary miracles-
A fresh pot of tea you didn't have to make yourself.
An unexpected phone call from an old friend.
Green stoplights on your way to work or shop.
I wish you a day of little things to rejoice in...The fastest line at the grocery store.
A good sing along song on the radio.
Your keys right where you look.
I wish you a day of happiness and perfection-little bite-size pieces of perfection that give you the funnyfeeling that the Lord is smiling on you, holding you so gently because you are someone special and rare.
I wish You a day of Peace, Happiness and Joy.
They say it takes a minute to find a special person, an hour to appreciate them,a day to love them, but then an entire life to forget them.

Take the time!
